The Winery
In the 1790’s, HCW’s site was a working dairy farm. Now, on the 15 beautiful acres, HCW grows specific hybrid varietals suited to the particular, local climate – a cold winter and a short growing season, from May to October. These varietals are unique (developed through research at the University of Minnesota and Cornell to grow in these conditions), and result in HCW’s line of distinctive wines.
HCW offers a beautifully renovated tasting room, along with outdoor seating and a fire pit. No matter the season, HCW is ready to entertain you. HCW also is kid and dog friendly.
The Winemakers
Steven Rosario and Justen Nickel are graduates of The Culinary Institute of America in Hyde Park, with extensive experience as restaurant and wine professionals, including in the Napa Valley.
In 2020, Steven and Justen purchased HCW to realize their dream of offering sustainably & farmed, naturally oriented, and elegant wines made from hybrid grapes within a warm, inviting, and delicious guest experience. For Steven and Justen, the guest experience is the point of their work. They make the best possible wines with what Nature provides each year, coupled with the bounty offered by the Hudson Valley’s outstanding purveyors of cheese and charcuterie, for the pleasure and enjoyment of their guests.
In essence, at HCW, Steven and Justen have made a place that they would want to visit. They are “farmers who entertain and have a cooking problem,” and they want to provide a wonderful experience to their guests.
